Strawberry Protein Waffles

You just have to love when your dog wakes up before you do :)  This morning Walden woke us up around 6am whimpering in his crate because he wanted out.  He hasn't earned the privileges Sasha has of getting to stay out at night and even sometimes sleep at mom's feet.  Neal was able to go right back to bed after I let him out of the crate and took him for a bathroom break, but I was wide awake.  So I cleaned up my blog a little, did some web browsing, and at 9am decided I could wake Neal up for breakfast.

I always love to start the day off with a tasty, filling, and healthy breakfast.  Today was extra delicious, we had strawberry protein waffles and turkey bacon. 



Ingredients
1 3/4 cup all purpose flour
1 scoop vanilla protein powder
2 T sugar
1 T baking powder
2 beaten eggs
1 mashed banana
1 3/4 cup milk
1 t vanilla extract
Strawberries (8-12)

  1. Mix flour, protein, sugar and baking powder in a medium bowl.  Set aside. 
  2. Combine eggs, banana, milk and vanilla in another bowl.  Mix well and combine with your flour mixture.  Waffle mix will contain more lumps than a pancake mix.
  3. Cut up your strawberries into very small pieces and toss them into the waffle mix.

This mix will make about 12-15 waffles.  We each ate 2 1/2, gave the puppies some, and saved the rest.  It's good to get a mixing bowl with a lid to easily store the leftover batter in the fridge.  If you don't want to store them, you can cook all the waffles at once.  Neal and I prefer fresh "crisply cooked" waffles.  :-)
